Raw, Quick and Delicious is an answer given by the author to all of those who keep asking him if raw food meals take a lot of time to prepare. Doug McNish, a Torontonian, was trained as a chef. When he experienced benefits of raw food on his health, he decided to apply his skills to raw food exclusively and after several years of work, he re-qualified himself and became raw food chef. In his book he offers a short introductory chapter giving a brief overview of advantages of eating raw food , helpful kitchen equipment , some tips for transitioning to this kind of a lifestyle and even an idea for stocking a pantry including fifteen recipes for helpful to have at hand nut milk, nut cheese, sauces and dressings. His recipes focus on simple and delicious meals: smoothies, salads, snacks, pasta and noodles and desserts. So, how about starting your day with the Beat Me Green Juice made of beets, kale, celery and apple. Spicy Pear and Cabbage Salad for lunch and Squash Burrito for dinner? Oh, yes and dessert: carrot cake made of walnuts, dates, raisins and carrot or avocado mint pudding of avocado, agave, vanilla and mint, or maybe something more decadent like White Chocolate and Coconut Cream or Chocolate, Coconut Bark…mmmmm
