Wheat Belly or the Advenures of FrankenFood

Wheat Belly is a book written by William Davis a cardiologist, Medical Director and founder of the Track Your Plaque program for heart disease prevention and reversal. It has been published few years ago and I have heard about it but never read since I was sure it was intended for "those gluten intolerant" people. I couldn't have been more wrong. First of all is not about them, it is about us. Human being cannot digest gluten. Secondly, it is not about gluten but about wheat  (and all the grains, in fact ) and it is truly fascinating like any other information, which clears the path to health and wellbeing. In '70s "modern wheat has been hybridized (crossing different strains to generate new characteristics) (...), backcrossed  (...), and hybridized with non-wheat plants (to introduce entirely unique genes).By definition, hybridization, backcrossing, and mutation-inducing techniques are difficult to control, unpredictable, and generate plenty of unexpected results. In short, they are worse than genetic-modification. " Therefore ingested wheat causes a lot of health problems from headaches and cramps to acid reflux and irritable bowel syndrome symptoms to autoimmune diseases and mental health problems. Foods made of wheat flour raise blood sugar higher than other foods including table sugar. "Organic, multigrain, sprouted-it makes no difference."-warns the author.  Wheat has  also appetite-stimulating effects of the opiate-like compounds which make people simply overeat.....wheat. So, if you think , as I used to, it is not about me, it is about celiac disease, the destructive intestinal disease from wheat gluten ( that affects only 1% of the population), think twice,  because it’s about all the other destructive health effects one may not even expect and attribute to wheat consumption. Whether you agree or not - give it a try. Two-three weeks of an experiment of not ingesting wheat (be aware it is in sweets and in spices....) will probably bring some changes. People who quit wheat experienced total relief from arthritis,high blood pressure, high cholesterol and triglycerides,  improvement in asthma ,schizophrenia and complete relief from, disappearance of leg swelling and numbness. Weight loss is just a side average one pound per week (if there is any to shed).Well, I do not eat wheat, anyway but what I realized is that although what I eat is very important, what I DO NOT eat seems even more important.
